Preheat your oven to 400 °F. Butter an 8x8-inch baking dish and set it aside.
Steam the whole cauliflower until it's tender but not soggy; this usually takes about 15 minutes. Let it cool slightly, then slice the cauliflower horizontally into thick rounds.
Heat the 2 tablespoons peanut oil in a saucepan over medium heat.
Add the 1 tablespoon ginger, 5 tablespoons shallot, and 1 1/2 teaspoons garlic, and sauté for 3 to 4 minutes until softened and fragrant. Stir in the 1/4 teaspoon cinnamon, 6 servings curry powder, 1/2 teaspoon ground cardamom, 1/2 teaspoon ground cumin, and 2 pinches ground nutmeg, and continue to sauté until the spices are aromatic, about 3 minutes.
