Cuban Style Pork Medallions

Combine all the marinade ingredients and toss them over the pork. Gently rub the marinade into the pork, making sure each piece is coated.
Let the pork stand in the refrigerator for at least 1 hour to absorb the flavors.
Place the marinated pork in the heated frying pan. Sauté until each side is a beautiful golden, turning the medallions only once. Once the pork is cooked through, remove it from the pan.
Add another drizzle of olive oil to the pan, then add the cilantro, lime zest, garlic, and sliced onion. Sauté this mixture until the onion is slightly charred and softened. Pile this aromatic topping over the cooked pork.
Finally, squeeze the juice of the zested lime over the pork before serving.
