Stir in 1 tbsp soy sauce (if you want a stronger color, though the rice can remain light), 2 tbsp green chilli sauce (if you prefer a spicier fried rice), 1/4 tsp pepper flakes, 1 tsp pepper powder, and 2 tablespoons of salt. Add a little sesame oil at this point too.
Keep stirring until the fried rice is hot and well-combined. Just before serving, while the rice is still steaming, stir in the 2 tbsp of spring onion greens. This keeps them crisp and bright green.
