Chilli ginger lamb chops
These lamb loin chops get a bright, spicy marinade that's quick to whip up. Fresh garlic and ginger, a hint of lemon, and a warm blend of spices coat the lamb before it hits the grill. Giving the chops a good couple of hours to soak up all those flavors, or even letting them sit overnight, makes all the difference. When they're ready, a quick barbecue over hot coals leaves them beautifully charred on the outside and still pink and juicy in the center.

Marinate the Lamb Chops
In a bowl, combine the crushed garlic, ginger, lemon juice, olive oil, chili powder, and cumin. Use a hand blender to blitz the mixture until it's completely smooth. Spread this marinade evenly over both sides of the lamb chops, then transfer them to the fridge to marinate for at least a couple of hours, or ideally, overnight. - 02
Barbecue the Chops
Heat your barbecue until it's good and hot. Place the marinated chops directly over the coals and cook them for about 3 minutes on each side. You're looking for them to be nicely cooked through but still have a blush of pink and plenty of juiciness in the center.
