Chile Underground's Texas Caviar
This Texas Caviar is a lively mix of black beans, black-eyed peas, and corn, tossed with fresh bell pepper, onion, jalapeño, and grape tomatoes. A quick sauté of some of the vegetables mellows them slightly before everything gets combined. The dressing, a blend of balsamic and red wine vinegars with olive oil and spices, pulls it all together. It needs at least a couple of hours in the fridge to let the flavors meld, so it's a good make-ahead option. Serve it chilled with sturdy corn chips for scooping.
