Chicken Parmentier
Chicken Parmentier is a cozy, layered dish similar to a shepherd's pie, but with a chicken and vegetable filling instead of lamb or beef. A creamy mashed potato topping, enriched with butter, cream, and egg yolks, covers a slow-cooked base of shredded chicken, shallots, carrots, celery, and tomatoes. It's finished with a sprinkle of Gruyère cheese and baked until bubbling and golden. This recipe comes together with about twenty minutes of active cooking before it goes into the oven.

Prepare the Potato Topping
Boil the potatoes in salted water until they are tender when pierced with a fork. Drain them well, then push through a potato ricer for a smooth texture, or mash thoroughly. Stir in the 30g butter, 5 tablespoons double cream, and 2 egg yolks, then season with salt and pepper to taste and set aside.
