Prepare Dough and Chill Cheese
First, cut the mozzarella into long strips and pop them into the fridge. Keeping the cheese cold is key to preventing it from melting too quickly when it fries.
In a bowl, combine the flour, butter, and egg. Stir in the sugar, salt, and olive oil, then gradually add the milk, kneading until you have a smooth, elastic dough that’s easy to work with.

Wrap and Fry
Roll out the dough with a rolling pin and cut it into strips, about 2 to 3 cm wide. Wrap each dough strip around a cold cheese strip, forming a spiral, making sure the cheese is completely covered to keep it from escaping in the hot oil.
Lightly roll the wrapped cheese sticks in flour — this helps them crisp up evenly and prevents sticking. Heat oil in a frying pan until it's shimmering and hot, then carefully add the cheese sticks. Fry them, turning occasionally, until they're deep golden on all sides.
