Total time: 45 min
Yield: 4 servings
Cuisine: Indian
Ingredients: 4 pieces chicken thighs; 2 cups buttermilk; 2 cloves garlic; 1 teaspoon salt; 0.5 teaspoon pepper; 0.5 teaspoon cayenne pepper; 0.25 teaspoon ground coriander; 0.25 teaspoon cumin; 0.25 teaspoon cardamom; 1 tablespoon oil; 1 small onion; 2 tablespoons butter; 2 teaspoons lemon juice; 2 teaspoons ginger; 2 garlic cloves; 2 teaspoons garam masala; 1 bay leaf; 1 can tomato sauce; 1 can canned tomatoes; 1 pint whipping cream; 1 bunch cilantro

This butter chicken recipe starts with an overnight marinade in buttermilk and spices, which helps tenderize the chicken thighs. The rich, creamy tomato sauce comes together quickly while the chicken marinates, building layers of flavor with ginger, garlic, and garam masala. Once the chicken is browned, it finishes cooking directly in the sauce, thickening slightly at the end for a lush finish. It's a comforting dish that's ready in about 45 minutes of active cooking time, not counting the marination.
