Braised Beef Chilli

Preheat the Oven
Preheat your oven to 120°C/225°F/gas mark 1.
Switch the palette to suit the room. Your choice is saved locally.


Take the beef out of the fridge to bring it closer to room temperature. Meanwhile, pulse the onions and garlic in a food processor until they're finely chopped.
Heat 2 tbsp olive oil in a large casserole dish over medium-high heat. Sear the beef on all sides until it's deep golden brown, developing a good crust.
Remove the seared beef and set it aside. Add another small amount of olive oil to the casserole, then add the chorizo. Cook until it's browned and has rendered some of its fat. Remove the chorizo and set it aside with the beef.
Add the finely chopped onion and garlic to the rendered chorizo oil, along with the cumin, allspice, cloves, cinnamon stick, bay leaves, oregano, and ancho chillies. Cook, stirring occasionally, until the onions are soft, about 5-7 minutes. Season with salt and pepper, then stir in the balsamic vinegar, plum tomatoes, tomato ketchup, and dark brown sugar.
