Make the Marinade
In a medium bowl, combine the chili sauce, honey, pepper sauce, cider vinegar, soy sauce, cumin, and gin. Mix everything together until it’s well combined.
Switch the palette to suit the room. Your choice is saved locally.



Add the chicken breast strips to the marinade, tossing to coat each piece thoroughly. Cover the bowl and refrigerate for at least 30 minutes to let the chicken absorb the flavors.
Meanwhile, in a small bowl, combine the blue cheese salad dressing and cream. Stir until smooth, then refrigerate this dipping sauce until you’re ready to serve.
Pour the reserved marinade into the skillet with the chicken. Continue to cook over medium-high heat for 6 to 7 minutes, stirring occasionally, until the sauce has visibly thickened and the chicken is no longer pink inside.
Spoon the chilled dipping sauce into a small serving bowl. Sprinkle the top with fresh parsley and, if you like, a little extra crumbled blue cheese.
