Bleu Cheese Stuffed Wine Cherries With Honeycomb

In a saucepan, bring the red wine, cinnamon stick, lemon zest, and sugar to a boil. Once boiling, lower the heat to medium and let it simmer until the mixture has reduced by half.
Carefully remove the cherries from the poaching wine and set them aside to cool completely. If you're short on time, an ice bath will speed this up.
While the cherries cool, take the bleu cheese and roll it into 8 small pieces, each about the size of a cherry pit. Keep these refrigerated until the cherries are ready.
When you're ready to serve, take a cooled cherry, gently split it into two halves, and nestle a piece of bleu cheese between them. Press lightly to secure.
