Basil Marinated Grilled Chicken

   Mince Garlic and Basil

   Start by mincing the 4 cloves of garlic in a food processor. Once minced, add the 2 cups of basil leaves and process until the basil is roughly chopped.

   Add Olive Oil

   With the food processor running, slowly drizzle in the 1 cup of extra virgin olive oil until the mixture reaches a consistency similar to thin ketchup.

   Season the Marinade

   Add the 1/2 teaspoon of salt to the marinade and whirl for about 5 seconds to ensure everything is well combined.

   Marinate the Chicken

   Arrange the 8 chicken breasts in a baking dish. Pour the basil marinade over them, turning each piece to coat evenly on all sides.

   Cover the dish and refrigerate for at least 4 hours, or even overnight, to let the flavors really sink in.

   Grill the Chicken

   Preheat your grill to medium-high heat. Grill the chicken breasts until cooked through, which should take about 8 minutes per side. Look for nice grill marks and an opaque interior.
