Authentic Bolognese Sauce

   Sauté aromatics

   In a large skillet, heat the 3 tablespoons of olive oil over medium heat. Add the pancetta, onion, carrot, celery, and garlic. Cook for 10 to 15 minutes, stirring occasionally, until the vegetables soften and the pancetta renders its fat.

   Brown beef, add liquids

   Add the 2 pounds of ground beef to the skillet, breaking it up with a spoon. Cook until the beef is no longer pink, then stir in the 1 1/2 cups of wine, 1 1/2 cups of milk, and 1/4 cup of tomato paste. Scrape up any browned bits from the bottom of the pan.

   Simmer the sauce

   Season the sauce with 1 teaspoon of salt and 1/2 teaspoon of pepper. Let it simmer, uncovered, for 1 hour, or until most of the liquid has absorbed and the sauce has thickened to a rich consistency.
