Method

8 steps · 45 min

01
Preheat Oven, Prepare Tins
Preheat your oven to 350 degrees F. Lightly spray oil on two regular-size 12-cup muffin tins or two large 6-cup muffin tins.
02
Whisk Dry Ingredients
In a large bowl, whisk together the flour, ground flax, baking soda, cinnamon, nutmeg, ginger, and salt.
03
Add Wet Ingredients
Make a small well in the center of the dry ingredients, then add the honey, eggs, vanilla, and applesauce.
04
Combine Ingredients
Stir the ingredients together until they are just combined, leaving some small spots of flour remaining. Avoid overmixing to keep the muffins tender.
05
Fold in Carrots and Cranberries
Gently fold in the shredded carrots and cranberries until they are just incorporated into the batter. Again, be careful not to overmix.
06
Fill Muffin Tins
Distribute the batter evenly among the muffin tin cups. Sprinkle some oats on top of each muffin.
07
Bake Muffins
Bake for 20-24 minutes for large muffins, or 18-20 minutes for regular-size muffins. The muffins are ready when a toothpick inserted into the center comes out clean.
08
Cool Muffins
Remove the muffins from the oven and transfer them to a wire rack to cool completely. You can enjoy them right away, or freeze any extras for a quick snack later.
