Apple Pears and Dates Chutney / Compote

While the dates are soaking, cut the apples and pears. If you're prepping the fruit ahead of time, a quick soak in 2 tablespoons of vinegar will keep them from browning. Otherwise, you can add the vinegar later.
Once the dates are softened, transfer them, along with the cinnamon, red chilies, ginger, and the cut fruit, to a blender. Process until you have a smooth purée. Pour this purée into a pan and stir in the brown sugar.
Stir in the salt, pepper, and cumin powder. Place the pan over low flame and cook, stirring occasionally, until most of the water has evaporated and the chutney has thickened. This can take anywhere from 30 minutes to 1 hour, depending on how much liquid the fruit released.
Once the chutney is thick, remove it from the heat and let it cool completely. Transfer it to an airtight jar and store it in the fridge. This chutney is good with crackers, on sandwiches, or as a dip with cream cheese.
