Preheat your oven to 350 degrees F. Line two large baking sheets with parchment paper.
Break the 7 ounces almond paste into chunks and place it in a food processor.
If the almond mixture is on the thicker side, pour the 1/2 cup sliced almonds onto a plate. Squeeze circles of the dough onto the almonds, then flip them over to coat both sides before arranging them on the prepared cookie sheets.
If the mixture is looser, place small mounds of sliced almonds directly on the cookie sheets where each cookie will go. Pipe the almond dough into circles on top of these almond piles, then sprinkle with a few more almonds.
Bake the cookies for 9-12 minutes. Keep a close eye on them towards the end, as they can turn dark quickly.
Allow the cookies to cool completely on the parchment paper. Once cool, turn half of them over and spread with your choice of jam or frosting. Top each with another cookie to form a sandwich, then sprinkle with powdered sugar.
