Algerian Carrots
This dish features tender steamed carrots, simmered in an aromatic blend of spices. Garlic, cinnamon, cumin, and thyme are gently cooked in olive oil, then combined with some of the carrot cooking liquid and a bay leaf to create a fragrant sauce. The carrots go back into the pan to absorb all those warming flavors, finished with a bright squeeze of lemon juice. It's a simple side that comes together quickly.

Steam the Carrots
Set a steamer insert into a saucepan, adding 1 1/2 cups of water just below the steamer's bottom. Cover and bring the water to a boil over high heat. Add the sliced carrots, reduce the heat to medium, and cover again. Steam until the carrots are tender but still have a slight bite, about 4 to 6 minutes, depending on how thick your slices are. Make sure to reserve 1/2 cup of the cooking liquid for later.
