Ají de Aguacate Recipe (Colombian Spicy Avocado Sauce)
This Colombian ají de aguacate is a spicy avocado sauce that comes together in about fifteen minutes with a food processor. It's built on ripe avocados, a fiery habanero, and brightened with lime juice, vinegar, onion, scallions, and cilantro. A raw egg helps emulsify the sauce, giving it a rich, creamy body. Serve it alongside grilled meats, empanadas, or as a dip for plantain chips. You can thin it out with a bit more lime juice if you prefer a looser consistency.
