In a medium bowl, whisk together the 1 cup flour, 2 teaspoons baking powder, and 1/2 teaspoon salt. Set this dry mixture aside.
In a separate large bowl, using an electric mixer, beat the 8 ounces lime yogurt, 3 eggs, 1/2 cup sugar, 1 teaspoon vanilla, 1/2 cup grapeseed oil, and 2 lemon zest until they are well combined and smooth.
Switch to a spatula and gently fold the reserved flour mixture into the wet ingredients until just incorporated; be careful not to overmix. Coat a 9 x 5 loaf pan with floured baking spray (or line with parchment paper and spray) and pour the batter in, smoothing the top evenly.
