Torrijas with sherry
Torrijas are a Spanish take on French toast, typically made with thick slices of bread soaked in a creamy liquid and then fried until golden. This version uses sweet sherry in the soaking mixture, which adds a subtle, aromatic warmth to the finished dish. You'll want to let the bread soak for a good ten minutes to ensure it absorbs plenty of the rich liquid before frying. Serve them dusted with icing sugar and a dollop of crème fraîche for a simple, elegant treat.

Soak the Bread
In a wide, shallow bowl, whisk the eggs with the cream, milk, golden caster sugar, and sherry. Cut each thick slice of bread in two, then dip them into the egg mixture, turning to ensure both sides are well coated. Let the bread soak for about 10 minutes to fully absorb the liquid, carefully turning them over occasionally to prevent them from becoming too soggy. - 02
Fry the Torrijas
Heat 1½ tablespoons of olive oil in a large frying pan over medium heat. Cook the soaked bread for about 3 minutes on each side, until the surface is dark golden and crisp on the edge. As you cook the remaining slices, keep the finished torrijas warm in a low oven.
