In a large non-reactive pot, combine the 4 cups freshly apple juice, 1 cup water, 2 cinnamon sticks, 1 inch ginger, 1/2 orange, 1 tablespoon maple syrup, 1/4 teaspoon allspice, and 1/8 teaspoon nutmeg. Bring the mixture to a boil over medium-high heat.
Once boiling, let it bubble for about 5 minutes. Then, cover the pot, reduce the heat to low, and let it simmer gently for 30 to 40 minutes. After simmering, line a colander with cheesecloth and carefully strain the cider to remove the spices and fruit.
