Butter eight 3/4-cup soufflé dishes, then sprinkle them generously with sugar. Tilt each cup to coat it completely, tapping out any excess sugar. Arrange the prepared dishes on a large baking sheet.
Position a rack in the center of your oven and preheat it to 204 °C.
Using a rubber spatula, carefully fold about 1/4 of the beaten egg whites into the chocolate mixture to lighten it. Then, gently fold in the remaining egg whites in 2 additions, being careful not to deflate the mixture too much.
Divide the chocolate mixture evenly among the prepared soufflé dishes, filling them completely to the rim.
