Shortbread Lemon Cookies
These shortbread cookies have a tender, crumbly texture with a bright lemon flavor, thanks to both zest and juice in the dough. The dough comes together quickly, but needs a good chill to firm up before slicing. In a mixing bowl, beat the 1 1/2 sticks of butter with 1 egg until combined. Add the 2 cups almond flour, 1/2 cup caster sugar, 1 1/4 cups all-purpose flour, and 1 tablespoon lemon juice. Mix with a mixer on the lowest setting until just combined.
