Rogaliki (Polish Croissant Cookies)
Rogaliki are small, crescent-shaped cookies with a sweet jam filling, much like miniature croissants. The dough, a simple mix of butter, cream cheese, and egg yolks, comes together quickly and chills for just a short time before rolling. Once shaped and filled, they bake up golden and are usually finished with a dusting of powdered sugar. This recipe makes a large batch, roughly 60 cookies, which is ideal for sharing.

Mix the Dough
In a medium bowl, combine the egg yolks, cream cheese, and baking powder using a hand mixer. Gradually add the flour.
Once the mixture becomes too stiff for the mixer and resembles wood chips, switch to kneading by hand until a smooth dough forms.

Chill Dough and Preheat Oven
Form the dough into a roll, wrap it in foil, and freeze for 15 minutes. While the dough chills, preheat your oven to 375 °F.
