This Olivier Salad is a classic potato salad, built from a mix of finely diced potatoes, carrots, sausage, and tangy pickles. Peas, hard-boiled eggs, and green onions are folded in, all bound together with a generous amount of mayonnaise. For the best flavor, make it ahead and let it chill in the fridge for at least an hour; this gives everything time to meld.

Boil Potatoes and Carrots
Start by cutting the potatoes and carrots into small, uniform cubes. Put them in a large pot, cover with water, then stir in 1 tablespoon salt and 1/2 tablespoon white wine vinegar. Bring the water to a boil over medium-high heat, then drop the heat to medium and simmer until the potatoes are cooked through and tender, about 15 minutes.
