Portuguese custard tarts
These Portuguese custard tarts feature crisp puff pastry cases filled with a rich, spiced custard. The process involves rolling out the pastry, cutting it into rounds, and pressing them into fairy cake tins to form thin shells. A fragrant custard, infused with lemon and cinnamon, gets poured into these cases and baked until the pastry turns golden and the custard darkens. Finish with a dusting of icing sugar and cinnamon for a classic treat.

Roll and Shape Pastry
First, mix the 2 tablespoons of plain flour and 2 tablespoons of icing sugar to dust your work surface. Roll the puff pastry out into a rectangle, roughly 45 x 30cm. Once you have your rectangle, roll it up lengthways to create a long, tight sausage shape. - 02
Cut Pastry Rounds
Slice the pastry sausage into 24 wheels, each about 1–2cm thick. Aim for even thickness so they bake consistently.
