Peach Melba

1. 01

   Prepare the Cake

   Split the sponge cake in half, aiming for a thickness of about 3cm.

   Take one of those halves and cut it into 4 rounds, sized to fit your peach halves.

   Dice Peaches

   Dice half of the peaches into small pieces; these will be scattered over the top later.

   Soak Cake Rounds

   Place a round of sponge cake into each glass dish, then soak each one generously with brandy.

   Assemble Peaches and Ice Cream

   Nestle a peach half on top of the brandy-soaked sponge, making sure the hollow side faces up. Then, place a scoop of vanilla ice cream into the hollow of each peach.

   Finish with Toppings

   Drizzle the raspberry syrup over the ice cream. Finish each dish with a swirl of whipped cream and a sprinkle of chopped almonds.

   Scatter the diced peaches and any extra fresh raspberries around the dish for a final flourish.
