Orange Zest Maple Date Bars

To make the date filling, pit and finely chop the dates. In a medium saucepan, combine the dates, water, and maple syrup. Bring the mixture to a boil over medium-high heat, stirring often.

Once boiling, add the orange zest and stir. Reduce the heat to medium and cook, stirring occasionally, until most of the water has evaporated and the mixture thickens to a jam-like consistency.
