   Prep Oven and Dry Ingredients

   Preheat your oven to 150°C/300°F and line two baking trays with parchment paper. In a large bowl, combine the oats, coconut, flour, sugar, and salt, whisking them together until evenly mixed.

   Meanwhile, in a small pot, melt the butter and inverted sugar syrup together over low heat, stirring just until they are combined and smooth.

   Combine Wet and Dry Mixtures

   Stir the baking soda into the 2 tablespoons water until it fully dissolves. Add this mixture to the melted butter and syrup, then pour the entire wet mixture over the dry ingredients in the large bowl.

   Shape and Flatten Dough

   Mix everything well, either with a spoon or your hands, until a cohesive dough forms. It should hold together without being too sticky. Divide the mixture into 32 balls, spacing them out on your prepared baking sheets. Use your palm to gently press down and flatten each cookie ball slightly.

   Bake and Cool Cookies

   Bake for 12-15 minutes, rotating the trays halfway through if your oven tends to bake unevenly. The cookies are ready when they turn a light golden brown around the edges. Let them rest on the baking trays for 5 minutes to firm up before carefully transferring them with a spatula to a wire rack to cool completely.
