Nutella Cupcakes & Peanut Butter Frosting Recipe

Preheat your oven to 350 degrees. In a small bowl, whisk together the cake flour, salt, baking powder, and cocoa powder.

In a large bowl, using an electric hand mixer, cream the sugar and 1 stick of butter until the mixture is light and fluffy.

Add the Nutella to the creamed butter and sugar, mixing until just combined. Next, beat in the 2 eggs, one at a time, ensuring each is fully incorporated before adding the next. In a separate measuring cup, whisk together the 1/2 cup milk and vanilla.

With the mixer on low speed, add half of the dry flour mixture to the large bowl, mixing until just combined. Then, add half of the milk mixture, mixing again. Repeat with the remaining dry mix and finally the remainder of the milk. Mix until the batter is smooth, creamy, and a light chocolate color.

In a large bowl, using an electric hand mixer, cream together the 1 stick of butter and 1 cup of natural creamy peanut butter until they are well combined and smooth.

Gradually add the 2 cups of confectioners sugar, mixing until fully incorporated. Finally, add the 4 Tbsp milk, mixing until the frosting is creamy, smooth, and light in color. Pipe or spread the frosting generously over the cooled cupcakes. If you like, finish with some shaved chocolate.
