Manjar (Dulce de Leche)
Manjar, also known as dulce de leche, is a classic caramelized milk confection. This version starts with milk, sugar, and vanilla, simmering gently until it transforms into a rich, amber-colored spread. It takes about an hour or more on the stovetop, requiring a bit of patience and continuous stirring as it thickens. Once cooled, it sets to a spoonable pudding consistency, perfect for spreading or eating straight from the bowl.

Simmer the Milk
Start by combining the milk, sugar, and vanilla extract in a saucepan. Bring it to a boil over high heat, then immediately reduce the heat to medium-low. Continue to cook, stirring constantly, until the mixture thickens and takes on a deep caramel color. This usually takes about 1 hour or more; you're looking for it to coat the back of a spoon. - 02
Finish and Chill
Stir in the baking powder. Keep cooking and stirring until the caramelized milk reaches a thick, pudding-like consistency. Pour the manjar into a bowl and let it cool completely in the refrigerator until firm.
