Madeira Cake

   Preheat Oven, Prepare Tin

   Start by preheating your oven to 180°C/350°F/Gas 4. Then, grease an 18cm/7in round cake tin, line the base with greaseproof paper, and grease the paper again.

   Cream Butter and Sugar

   In a bowl, cream the butter and sugar together until the mixture is pale and fluffy. Beat in the eggs one at a time, making sure to beat the mixture well after each addition. With the last egg, add a tablespoon of the flour to help prevent the mixture from curdling.

   Fold in Flour and Zest

   Sift in the remaining flour and gently fold it into the batter. Add just enough milk to achieve a mixture that falls slowly from the spoon. Finally, fold in the lemon zest.

   Bake the Cake

   Spoon the batter into your prepared tin and lightly level the top. Bake on the middle shelf of the oven for 30-40 minutes, or until the top is golden-brown and a skewer inserted into the center comes out clean.

   Cool the Cake

   Remove the cake from the oven and let it cool in the tin for 10 minutes. After that, turn it out onto a wire rack to cool completely.

   Decorate and Serve

   When ready to serve, decorate the cooled cake with the candied peel.
