Low-Fat Oatmeal Banana Bread

Preheat your oven to 350 degrees F. Grease and flour a 9"x5" loaf pan and set it aside.
In a large bowl, stir together the baking powder, baking soda, cinnamon, flour, old fashioned oats, and salt. In a smaller bowl, mash the bananas with a potato masher or fork until mostly smooth, leaving a few small lumps if you like.
Pour the banana mixture into the bowl with the dry ingredients and mix until just combined. The batter will be fairly thick at this point.
In a separate medium bowl, use an electric hand mixer to beat the egg whites until stiff peaks form. Gently fold these whipped egg whites into the banana batter in three additions, taking care not to deflate them too much.
Remove the loaf from the oven and let it cool in the pan for 5 minutes; this helps it set before handling.
Carefully invert the loaf onto a wire rack and let it cool for another 10 minutes before slicing into 10 equally sized slices.
