   Preheat oven

   Preheat your oven to 350 degrees F (175 degrees C).

   Infuse milk

   Pour the milk into a saucepan along with the lemon zest and cinnamon sticks. Bring it to a gentle simmer over medium-high heat, then reduce the heat to low and let it cook for 5 minutes.

   Turn off the heat and allow the mixture to steep for another 15 minutes to really let those flavors develop.

   Make custard base

   Gently whisk the eggs and sugar together until the sugar has completely dissolved. Slowly stream in 1 cup of the hot, infused milk, whisking constantly, until it's fully incorporated. Stir this tempered egg mixture back into the remaining hot milk, then pour in the pisco and mix until everything is well combined.

   Bake and chill

   Strain the custard through a fine-mesh sieve into a 2-quart ceramic casserole dish to catch any bits of lemon zest or cinnamon. Bake in the preheated oven until the custard is set and the top is lightly browned, about 30 minutes. Make sure to chill it thoroughly before serving.
