Jamaican Sweet Potato Pudding
This Jamaican sweet potato pudding is a spiced, sweet bake with grated sweet potatoes, coconut milk, and brown sugar. It's fragrant with allspice, cinnamon, nutmeg, and ginger, and studded with raisins. The pudding bakes for about an hour and a half, coming out of the oven mostly set but still yielding in the middle. It's a simple dessert that's easy to pull together.

Prep Oven and Pan
Get your oven going to 350°F (175°C). Then, grease and line a 9-inch round pan or a loaf pan with parchment paper. - 02
Grate Potatoes, Prep Raisins
Add the cut sweet potatoes to a food processor and pulse until they're finely grated. In a separate small bowl, toss the raisins with 2 teaspoons of the all-purpose flour (taken from the ½ cup total) to keep them from sinking in the batter. Set them aside for now.
