Process Walnut-Bacon Mixture

In a large bowl of a food processor, combine the walnuts, crispy bacon, sugar, and cinnamon. Pulse until the walnuts and bacon are finely chopped. The bacon should be fried until very crisp before chopping; this helps it break down evenly. Set this mixture aside.

Layer First Phyllo Sheets

First, cut the phyllo dough into 13-inch by 9-inch rectangles. In a greased 13-inch by 9-inch baking dish, lay down one phyllo sheet and brush it generously with melted butter.

Repeat this process, adding 5 more layers of phyllo, brushing each sheet with butter. If your phyllo strips are smaller, you can overlap them slightly to form full rectangles.

Add First Walnut Layer

Sprinkle 1 cup of the prepared walnut-bacon mixture evenly over the buttered phyllo layers in the baking dish.

Build Remaining Layers

Continue building the baklava by repeating the layering process from steps 2 and 3. You'll want to create 3 more layers of phyllo and walnut mixture, for a total of 4 such layers.

Top with Phyllo

Once all the walnut layers are in place, top with the remaining phyllo sheets, brushing the very last sheet generously with butter.

Score the Baklava

Using a sharp knife, carefully score the baklava, cutting only halfway through the layers, in a triangle or diamond pattern. This helps the honey penetrate later.

Bake Until Golden

Bake the baklava in a 300 degree oven for 1 hour and 25 minutes, or until the top turns a deep golden brown.

Warm and Pour Honey

While the baklava is still hot from the oven, gently heat the honey in a small saucepan over medium-low heat until it's very warm but not boiling. Carefully spoon the hot honey evenly over the hot baklava.

Cool and Rest

Let the baklava cool in its dish on a wire rack for at least 1 hour. After that, cover it loosely with foil and let it stand at room temperature until you're ready to serve.

Finish Cutting to Serve

Just before serving, use a sharp knife to finish cutting through the scored lines, separating the baklava into individual triangles or diamonds.
