Home-made Mandazi
Mandazi are a lightly sweet, fried bread, a bit like a doughnut but less rich, often spiced with cinnamon. This version uses self-raising flour, making the dough straightforward to mix and knead. You can swap regular milk for coconut milk in the dough if you like, which adds a subtle tropical note. Once fried to a light golden brown, they're good served warm or at room temperature.
