Griddled flatbreads
These griddled flatbreads are made with a mix of strong wholemeal and white bread flours, creating a soft, pliable dough. After a couple of rises, the dough is shaped into squares and cooked directly on a hot grill or BBQ until they puff up and develop some char. They're quick to cook and perfect for serving warm alongside your favorite dips.

Make the Dough
Combine the flours, yeast, sugar, and 1 teaspoon salt in a food processor and mix thoroughly. Pour in 350ml warm water and the olive oil, then process until a soft dough forms. Continue mixing for 1 minute, then transfer the dough to a lightly oiled bowl, cover, and let it rise in a warm spot until it has doubled in size, which should take about 1 hour. - 02
