Gevulde speculaas
Gevulde speculaas is a classic Dutch treat: a spiced shortcrust dough layered with a sweet almond paste filling. The dough itself is simple, a mix of flour, brown sugar, speculaas spices, and butter, brought together with milk. While you can bake it right away, letting the dough rest overnight really deepens its characteristic spice notes. The almond paste, softened with a bit of egg, forms a soft layer between two sheets of this fragrant dough.

Mix and Knead Dough
Combine the self-rising flour, brown sugar, speculaas spice mix, and a pinch of salt in a bowl. Add the butter and start with 6 tablespoons of milk, then knead everything into a firm ball. If the dough feels too stiff, add the remaining milk a little at a time until it comes together. - 02
Chill the Dough
Wrap the dough tightly in plastic wrap and refrigerate it, ideally overnight. While you can bake it sooner, the spices will develop a much richer flavor with the rest.
