Fyrstekake – Norwegian Prince Cake Recipe

In a large bowl, cream the 3/4 cup granulated sugar, 1 teaspoon vanilla extract, and 2/3 cup butter together until the mixture is light and fluffy.

Beat in the 4 egg yolks, then add the 2 cups flour and 1 teaspoon baking powder. Knead with your hands until the dough is smooth and cohesive.

In a food processor, pulse the 1 1/2 cups almonds and 3/4 cup brown sugar until the almonds are finely ground. You can choose how coarse or fine you want the texture.

Transfer the mixture to a bowl, then stir in the 2 tablespoons melted butter, 2 eggs, and 2 tablespoons brandy. If you're using it, add 5 drops of almond extract. Mix until everything is well combined.
