Fresh Corn & Tomato Fritters

Heat 3/4 cup vegetable oil in a large nonstick skillet over medium-high heat until the oil is shimmering. Drop the batter, about 2 tablespoons at a time, into the hot oil.
Cook until the fritters are golden-brown around the edges, about 1 to 3 minutes. Carefully flip them and cook until deep golden brown on the second side, about 1 to 2 minutes.
Transfer the cooked fritters to a paper towel-lined plate to drain any excess oil. Continue frying the remaining batter, adding additional oil as needed to ensure the bottom of the skillet is covered.
Once all the fritters are cooked, arrange them with fresh tomatoes as you like. Drizzle generously with the dressing and sprinkle with crumbled bacon just before serving.
