Flapper Pie
Flapper pie is a classic Canadian dessert featuring a graham cracker crust, a thick vanilla custard filling, and a fluffy meringue topping. It's a pie that comes together in about 40 minutes, with most of that time spent baking the crust and then the meringue until it's toasted. The key to this pie is serving it fresh; the meringue will soften and liquefy if left too long, so plan to enjoy it the same day you bake it.

Make the Crust
In a medium bowl, combine the graham cracker crumbs, melted butter, granulated sugar, and ground cinnamon for the crust. Set aside about 2 tablespoons (30 mL) of this mixture for later. Press the remaining mixture firmly into the bottom and up the sides of a 9-inch deep-dish pie plate. Bake the crust for 10 minutes; it will only brown slightly.
