Eccles Cakes
Eccles cakes are a classic British pastry, essentially a spiced currant and mixed peel filling encased in flaky puff pastry. The key is that buttery, laminated dough, which gets rolled and folded several times to build those crisp layers. They're traditionally served warm or cold with a cup of tea, but a wedge of tangy cheese is also a surprisingly good pairing.
