Duck Rumaki

1. 01

   Assemble the Rumaki

   Lay out each piece of bacon. In the center of each, place a slice of jalapeño and a piece of duck. Wrap the bacon tightly around the duck and pepper, then secure it with a toothpick.

   These can be assembled the day before and chilled overnight. When you're ready to cook, preheat your oven to 400 degrees.

2. 02

   Arrange and Bake

   Arrange the rumaki on a baking tray, leaving a little space between each piece so they cook evenly. Slide the tray onto the center rack of your preheated oven.
3. 03

   Bake Until Crisp

   Bake for 30 minutes, giving the tray a shake or two occasionally to ensure everything cooks evenly and the bacon turns crisp.
