These date squares feature a sweet, thick date filling sandwiched between two layers of buttery oat crumble. The filling comes together quickly on the stovetop, simmering until it's spoonably thick. Get your oven going to 350°F (180°C). While it heats, grease an 8-inch (20 cm) square baking pan; this helps the squares release cleanly later. - 02
Make Date Filling
In a medium saucepan, combine the dates and water. Bring them to a boil over high heat, then reduce the heat to low and let it simmer gently. Stir occasionally, watching as the mixture thickens to a spreadable consistency, which should take around 6 to 8 minutes. Take it off the heat, stir in the vanilla, and set it aside to cool down.
