Creamy Potato Cheese Soup

   Sauté the Onions

   Coat a nonstick medium pot with cooking spray and set it over medium heat. Cook the onions until they just begin to pick up some color.

   Add Spices and Carrots

   Stir in the carrots, salt, pepper, paprika, and mustard.

   Soften the Carrots

   Mix everything well and continue to cook until the carrots start to soften.

   Simmer the Soup

   Add the potatoes, vegetable broth, and half-and-half to the pot. Increase the heat to bring it to a boil, then reduce it to a simmer.

   Cook until the potatoes are completely tender, which should take about 20 minutes.

   Melt Cheese and Puree

   Stir in the Colby cheese until it's fully melted into the hot soup. Carefully puree the soup in batches in a blender until smooth.
