Form the crab cakes by pressing them into a 1/2 cup measure, squeezing tightly so they hold their shape. If you're shaping them by hand, press them together firmly to prevent them from falling apart.
Arrange the formed crab cakes on the lined baking sheet, leaving at least 1 inch between each one.
Add the garlic to the skillet and sauté for 1 minute. Then, stir in the remaining green onion, bread crumbs, and watercress stems, and sauté for another 1 minute.
Finally, add the chopped spinach and cook until it's wilted, about 1-2 minutes. Season the mixture to taste with salt and pepper.
