Christmas Pudding Flapjack
This is a simple flapjack recipe that puts leftover Christmas pudding to good use. You'll melt butter, brown sugar, and golden syrup with a bit of orange zest, then stir in oats and the crumbled pudding. Once baked, it sets into a dense, chewy bar that's great for snacking. It keeps well in an airtight tin, or you can freeze it for later.

Preheat and Melt Base
Preheat the oven to 180°C/fan 160°C/gas mark 4. Grease and line a 25cm x 20cm tin.
In a large saucepan, melt the butter, brown sugar, golden syrup, and orange zest over medium heat. Stir until everything is smooth and dissolved; the goal is to fully combine without letting the mixture boil and lose volume.
