This chocolate cake uses spelt flour for a slightly different texture than a classic all-purpose flour cake. Bloom the coffee mixture

In a small bowl, combine the 1 tablespoon of instant coffee with the 1 cup warm coffee, 1 teaspoon vanilla, 1 teaspoon baking soda, and 1/2 cup currants. Stir everything until the mixture is frothy.

Whisk dry ingredients

In a medium bowl, whisk together the 2 cups spelt flour, 3/4 cup cocoa powder, and 3/4 teaspoon salt.

Cream butter and sugars

In a stand mixer or with a hand mixer, beat the 1/2 cup butter, 1/2 cup brown sugar, and 1/2 cup white sugar until the mixture is light and smooth.

Add eggs and coffee

Beat in the 2 eggs, one at a time, mixing well after each addition until fully incorporated.

With the mixer running on low speed, slowly pour in the coffee mixture from step 1, continuing to mix until just combined.

Mix in dry ingredients

Still on low speed, gradually add the spelt mixture from step 2 to the wet ingredients, mixing until just combined. Be careful not to overmix.

Prepare bundt pan

Generously grease a bundt pan with butter, making sure to get into all the crevices. Then, dust the entire inside surface with cocoa powder, tapping out any excess.

Bake the cake

Pour the batter into the prepared bundt pan and bake for 50 to 55 minutes, or until a wooden skewer inserted into the center comes out clean.

Cool the cake

Let the cake cool in the pan for a bit before attempting to invert it onto a wire rack to cool completely.
