Stir in the 1 tablespoon vanilla extract. Turn the mixer to low and add half of the sifted dry ingredients. Mix until just combined, then add the 1 cup quark and mix well. Add the remaining dry ingredients and beat until the batter is smooth and creamy, about 2 to 3 minutes.
In a separate clean bowl, use clean beaters to beat the 5 large egg whites on high speed until frothy. Gradually add the remaining 1/4 cup sugar and continue beating until the egg whites form stiff, glossy peaks, about 5 to 6 minutes.
Using a large rubber spatula, gently fold about 1 cup of the chocolate batter into the beaten egg whites to lighten them. Then, carefully fold this mixture back into the main chocolate batter, just until the egg whites are fully incorporated. Be careful not to overmix, as you want to keep the batter light and airy.
Divide the batter evenly among your prepared pans and bake them in the center of the preheated oven for 20 to 25 minutes. Avoid overbaking. The cakes are done when their tops just begin to crack and a toothpick inserted into the center comes out with a few moist crumbs clinging to it.
